now answering the topic, since i bothered to use the aforementioned feature:
I'd say Ristar, Crusader of Centy or Final Fantasy Mystic Quest. mostly for their OSTs (and maybe make FFMQ less hated too, if possible)
not sure how a Ristar remake would work though. the art and sound were already good (specially for the day) and if that game was made 3D i can imagine several planets being a real pain to deal with (specially the ice boss) unless the 3D was in-visuals only, but that kind of design feels a bit pointless to me.
and people would probably acuse Crusader of being an Undertale rip off, despide being a WAY older game...
and maybe sell some CDs of those games' OSTs

Deus Ex is brilliant, and a remaster could show its incredible depth to a modern audience by sanding away its clunky edges and technical quirks, demonstrating what a brilliant (and honestly prophetic) game it still is to this day, without reducing its charm, complexity, or believability.

I would really like to see a remaster of the first Cars video game on home console by THQ (and perhaps its sequels if the game ends up well received and selling well), since the game would look so good and pretty on a next gen console. Plus, if they were able to remaster "SpongeBob SquarePants: Battle for Bikini Bottom", then maybe there might be a chance for them to try and negotiate with Disney and Pixar to do the same for this game.
A remaster of Touhou Highly Responsive to Prayers that runs natively on modern PCs would be nice. It's the very first Touhou game ever so it deserves to be preserved, even if it seems like ZUN is against it as far as I can tell.
I think the videogame would be cool for next gen consoles remade for Cars fans but honestly would be cool for me to see certain cool videogames based on franchises i enjoy!

An acually good remaster of sonic adventure 1 and 2. The original dreamcast versions are starting to show their age graphically wise and the remasters that followed the first game make it look and play worse. Also I don't like the models used in the gamecube version as I like the way the dreamcast models look more like an inbetween state from classic to modern sonic, and the gamecube models look too much like the characters modern designs.
So basically sonic adventure 1 and 2 on modern consoles with the gameplay not butchered by bugs and similar looking models that look like the original dreamcast versions but less polygon-y.
I can confirm Sonic the Hedhehog is a beautiful game and in fact it can be done more better than the crappy 2006 game!

Also a remaster of the original Amnesia: The Dark Descent or Eerie now that graphics have evolved in gaming.

I honestly would like a return to The Legacy of Kein series from Eidos but from what I heard some of the cast have passed since the last game Blood Omen 2 ... Soul Reaver really blew my mind when I first played the demo in 1998

Kirby and the Amazing Mirror (probably like Return to Dreamland Deluxe), mainly cuz it holds a special place in heart, it'd be a dream to have a full-on remake of Amazing Mirror (perhaps with better co-op play)
