UTSOH was good simplicity; where it had the illusion of simplicity yet carried great melody with it. Pentagram was bad simple for the sake of being simple. And no, NONE of the best riffs I've heard were simple. Most had some degree of difficulty in playing. But simple can be done well; look at UTSOH or Bathory's A Fine Day To Die. THAT'S good simple. The intro riff to Begravelsesnatt is tasty too.
