I have the exact same problem dude.
It sucks, because I don't think Flash is the greatest for exporting to quicktime.
I think it's probably easier to assess the animation using video because of the ability to scrub through the animation and play back any part you want, rather than having a coded timeline scroll bar in a .swf.
But yeah, my uni uses macs because apparently, according to most of the lecturers there, it's the best for design based projects, such as animation, music, video, art etc. :/
We export to Quicktime as well since i guess it is THE mac media player.
But I haven't been too successful with keeping my projects as a crisp and smooth quicktime video.
I know Flash CS3 has some better options with exporting it as a .mov, but I only have Flash 8 at home :S and I use a pc.
Maybe there's some awesome ".swf to .mov file converter" out there somewhere. I guess google is your friend there.
