With a dance mat, of course. :P Playing DS/DDR/SM/PIU/... with a joystick or joypad is just pathetic - at least if you're taking it seriously if you do that. :) That being said, I'm pretty sure you cannot actually press two buttons (like left/right) at the same time on the PS2 controller at least, anyway, so you have to use a mat there. StepMania is obviously a different beast, though.
