Lost a bit of interest for NES music lately, so my favorite at the moment is this hidden gem from somewhat early in NES' lifespan
Although I picked this one specifically, pretty much the entire Megaman 1 OST is golden to my ears.

The title theme from Pictionary does not need to use all of the power from the NES yet it still does it and makes a damn good song.
Cheetahmen as bad as it is has a very fun and catchy song. The song deserves a better game.

This one track from Streetfighter 2010 went way harder than it had to:
Classic Capcom composers kicked so much ass back in the day (evident by the many Megaman tracks in this thread).
Bionic Commando's OST also had that old Capcom coolnes. So much so that I rather had a Gametal track made in return, instead of getting paid, for doing an animation for JonnyAtma:
