My favorite Title Screens are ones that also function as the Main Menu.
But these ones are super slick in particular.

Psychonauts brain is underrated, in my opinion. It's literally a playable title screen! Granted, you can't do a whole lot except run around, but it's still a pretty fun idea!

Plants vs. Zombies, but SPECIFICALLY the console version. The artwork looks a lot nicer.
They aren't title screens really but I like the little splash screens on the wii menu when you would select a game to play. The smash bros brawl one made me lose my hearing though.
in cod black ops, there is an easter egg which allows you to play zork from the title screen, which is cool.

I love the title screen for metal gear solid though because of nostalgia reasons lol

This is exactly what I was thinking of when I saw this thread
if screens i like for the sound count: Final Fantasy Mystic Quest, the Epic Battle Fantasy series, Crystal Story 2.
I have some vague memories of games i ended up watching the demoplays of as a result of just sitting there on the title screen to enjoy it, but the only one i can remember right now is FFMQ (already listed above)
higurashi menu screens always rubbed me in a specific way that i liked
It looks good the music makes it all the more ephimeral or some like that

Psychonauts are awesome in many regards. Although if you play the game in many sittings, it gets slightly tiring to navigate the menu always, because after the initial "wow, how cool" moment, there isn't a lot of gameplay or stuff to explore, so it mostly adds a little delay before you can start. But Psychonauts were so innovative in many areas that this definitely suits the game.
In the sequel, this brain gets reused for the level-select map.

This is not specific to any game, but personally, I love it when the title screen evolves as you progress through the game's story.
Usually, the new game looks all nice and innocent, and towards the end of the game, it's an intense hellscape with still some shared recognizable elements from the first one.
Like Life is Strange, with Arcadia Bay basking in sunlight at the start, and ending with storms and a hurricane towards the end with the same outline of the city in view.
Witcher 3 adds Gaunter O'Dimm's brand to Geralt during the expansion's story.
Portal 2 swaps the entire background for your current location.
Warcraft 3 redecorates the entire user interface as well as the background scene as you switch to a new faction.
And many more.

I agree for sure, the Bowser's Inside Story title screen is what I would've answered with too. Might be my favorite title screen in any game, for the imagery you described and the music too. I really don't like what they went with for the title screen for the remake on Nintendo 3DS.
