Honestly I see your point. Honestly, not much springs to mind, except some Clutch lyrics, and they aren't even metal.

Seriously, if you want good lyrics my best guess is pink floyd. And other fairly old rock bands aren't bad Queen being an example. I know some people might not like the style of music but I find the tunes and lyrics to be quite catchy.

what about bands such as manowar that use a mythological element in their music, that require lyrics to tell the story? or bands like megadeth that use alot of political themes.
i think that the sound of a singers voice has to match the sound of the instrumentals, kind of like how lemmy has that dirty growling voice that matches motorheads instruments perfectly. On the other hand i was listening to entombment of a machine by job for a cowboy and the vocals and the instrumentals sound terrible together in my opinion. the loud screeching combined with the low instrumentals clashes and i felt that it ruined the song

Yeah some bands do have weight to their lyrics. However it is rather hard to find a metal band with good vocals (as in a nice sounding voice) and meaningful lyrics. Megadeth is a good band I like thier songs, but the vocals aren't exactly all that great. I mean Im not saying you have to be a fucking Opera singer or something, no just have a good sounding/powerful voice and I don't just mean loud. Anybody can be fucking loud, but few have a truly amazing voices.

the two best metal vocalists would have to be Rob Halford and Bruce Dickinson their voices are truly amazing, they have a nice sound and its backed up by amazing power.

see for me the vocals and lyrics are the least important part of any metal, they have to fit to the style of music and flow with it but i dont care about what they saying, thats why i love black metal whilst there are some bands that you can discern the lyrics in the main you cant really, just as long as the vocals contribute to the atmosphere and feeling of the track im happy

You've probably already heard it, but if you haven't, go out and buy the 'Metropolis Pt. 2: Scenes from a Memory' albun. It's a concept album, so all the lyrics link together and tell a story. Plus, it's DT :p
There's another song I like the lyrics to, but it's by Cradle Of Filth. It's called 'Absinthe With Faust', and it's based on the myth of Dr. Faust, who sold his soul to the devil for whatever he wanted, as long as he would go to Hell after 20 years, or something like that. The lyrics are well written in that song, pretty melodic chorus too.
Then you've got Tool's lyrics, especially in the Lateralus album. They appear to make no sense, but they are based on 'sequences' such as the 'Lateralus Prophecy' sequence, and the 'Holy Gift' sequence. The album has 13 tracks.
The Lateralus Prophecy sequence goes:
6,7,5,8,4,9,3,10,2,11,1,12,13
The Holy Gift sequence goes:
6,7,5,8,4,9,13,1,12,2,11,3,10
Listen to the album in these 2 orders. and it tells 2 different storys :)
