Any anime with Yoko Kanno composing the music, (such as Five Star Stories, Escaflowne, Cowboy Bebop) has an exceptional soundtrack. Yoko Kanno is by far my most favorite composer of anime music. Last year, the Jazz Band at my high school performed the song Tank from Cowboy Bebop. It was pretty suprising.
