dark souls has a ton of great dialogue, but especially the "stay safe" plerbs make me cry...
dark souls' world is border line depressing, but... these lines just feel warm by contrast, no matter how dark it gets, you can still find warmth in other folks :,)

I don't remember any that would mean a lot from the top of my head, although there certainly were lines that left an impact and I would probably recall them when replaying certain titles.
I quite liked the line:
Home is where I am remembered.
from Night of the Rabbit. Since I'm working on something involving memory loss and a destroyed hometown, it echoes the same message I wanted get across... find the people who know you.
The game also quite nicely works with the repeated line "Nothing is impossible." which, depending on who says it at which moment, ranges from hopeful to sinister.

It's really touching.
At the beginning of the game, when we go see the mirror, it show a "it's you!" message
So coming back to a place that look like the beginning at the end (the grey place), and you think it will show a different message, but it say that all this time, you're still the same good person you were, it's very touching TT
And funny quote : "I'm not a cat..." from One Shot :3

The somewhat infamous 'self-help booklet' remark from the Woolsey script for Final Fantasy IIIUS was one of the first 'laugh till I can't breathe' moments for me, because it was exactly in line with what I was thinking as the full cast from that game each individually began to Stuart Smiley at the final boss and my obnoxious cynical ass couldn't help but eye roll at it.
To see the game read my mind like that was something I had never considered. It was like five minutes before I got out of the laughing fit and could pick up the controller again.

That's a good one I loved that. There are probably quite a few great quotes in undertale and delta rune
