Toby Fox is who got me into composing game music myself!
Yoko Shimomura, Motoi Sakuraoba, Tim Follin, Grant Kirkhope, Yasunori Mitsuda, and of course the GOAT, Nobuo Uematsu.
My favorites in no order would have to be Toby Fox, Flashygoodness, Nobuo Uematsu, and Yasunori Mitsuda. I also like a lot of smaller composers from the internet VGM community, including Michael Frank, Adam Carey/Father P, Rewitkin, and Jamphibious.
Nobuo Uematsu, love him for Smash Bros. Brawl Main Theme, Chrono Trigger and Final Fantasy.
Takayuki Iwai(DarkStalkers), Koji Kondo(Super Mario), Remy Gazel (Rayman 1(rest in peace)), Laura Shigihara (PvZ), Jake Kaufman (Shovel Knight), Tee Lopez (Sonic Mania), etc.
