Because sometimes it sounds good with good production. Bad production for bad production's sake often produces shit black metal. When you produce something, the ideal production should be like that of Dissection's Storm of the Light's Bane or Mayhem's De Mysteriis Dom Sathanas, i.e. clear but razor edged and broad/reverby.

Argghhhhhhh that's my least favorite Gorgoroth album. I don't hate that drum sound, but I don't really like it, either. It's too "mushy", i guess (is that the word I'm looking for?) I like a more crisp drum sound. Raw enough to have that unbridled feel, but crisp enough to have that agressive cutting feel.
